Neu5Gc, a non-human sialic acid sugar molecule common in red meat that increases the risk of tumor formation in humans, is also prevalent in pig organs, with concentrations increasing as the organs are cooked, a study has found. The research suggests that Neu5Gc may pose a significant health hazard among those who regularly consume organ meats from pigs.

Steak raises cancer risk and now we know why

Some of you may remember a recent study showing why red meat is bad for the heart, while now there is a study showing why steak — or in particular red meats — raise the risk of cancer. To be clear, I am still very much a red meat eater and this is no way intended to change anyones opinions on steak consumption, but it is nice to understand the science behind what we put in our mouths.

Steak is bad for the heart and now we know why

“Red meat is bad for your heart”, that is typically the story we hear from people. While some might take this as meat is bad for us, or that it is wrong to eat red meat, science has been trying to find a better answer to that question. After all it wouldn’t do for science to say, it just does. Well as luck may have it, new research provides details on how gut bacteria turn a nutrient found in red meat into metabolites that increase the risk of developing heart disease. The findings may lead to new strategies for safeguarding individuals’ cardiovascular health.
